chicken mushroom noodle soup



 have you ever tried chicken mushroom noodle soup? its so taste and easy to make. comfort meal for the dinner. this soup remind my happy days in srilanka.there was one neighbor family with us. mr damitha  , mrs.priyadarsani with their two kids. they are not only family friends. they are like our own family members.their kids were lovely friends to my 1 year old son...sister priyadarshani making this chicken soup at least once a month. her son loved it so much.

these are the ingredients you want ,everything you can find from your everyday kitchen . for this recipe I used 1/4 cup red dhal (red lentils) and half of a big chicken breast.(sorry guys I forget to take a picture)

even I used  canned button mushroom for the recipe. because here in Maldives difficult  to find fresh mushrooms(we are stay in small island, far from the city).fresh mushroom are the best for this recipe.

 instead of using water+ soup cubes you can use chicken broth as well. usually I don't like add artificial flavors to my everyday foods. that is my way to cook fresh healthier  foods to my loving hubby and little one. if you also like my self just add only water or homemade chicken broth.
                                           
                                         

ingredients:

4 no's chicken legs or half of the chicken breast
1 can button mushroom or 6 no's fresh one
100 g noodles (instant or egg noodles)
1 large potato (peeled and cubed)
1 medium size carrot (cubed)
6-8 no's green beans
1 tomato (chopped)
1/4 cup red dhal
1 large onion (chopped)
4 no's garlic cloves (chopped)
1 tsp.  cumin seeds
salt and pepper to- taste
1 tbsp. olive oil
6 cups chicken broth or water + 2 chicken cubes


direction:

1.keep a large soup pot in a medium high heat. add 1 tbsp. olive oil .same time add  garlic and cumin seeds. then add onion.
2. fry it little and add 6 cups broth or water + 2 no's chicken cubes.
3.add chicken and lentils. bring to boil.
4. once water boils add cubed potatoes.
5. when potato and chicken cooked half away add carrot and then beans..
6. then add chopped mushroom.
7. next break up your noodles into small pieces and toss in to the soup pot.
8. add tomatoes ,salt and pepper to taste.
9.  continue boiling  until chicken and vegetables are cooked through.
10. at this point you can take out your chicken and pull out the meat apart with forks and add in to soup pot.
11. you can serve with home made bread toast.
