simple chicken tortilla wraps

Simple Chicken tortilla wrap






This chicken wrap is one of my son's favorite. it is very simple and easy to make. i made this for today breakfast. thindu ate four wraps in one go.

I used my home made tortillas for this.recipe here.but you can use premade tortillas as well. for the filling I used very simple ingredients .but you can use thanduri chicken,boiled or oven bake chicken with your favorite salsa and mayonnaise .but my son requested plain chicken wraps.




Ingredients:



here's you'll need:flour tortillas, cooked chicken,onion,tomato, cheese, lettuce ,pepper and salt


Direction:




  •   cook tortilla until golden brown.
  •   Spread tortilla with cheese,onion,tomato,chicken and lettuce. Sprinkle salt   and pepper.
  •   Roll up tortilla tightly to enclose fillings.
  •   Cut wraps in half.

Ingredients:
2 No's flour tortilla (warm)
½ tomato ,chopped
½ onion,chopped
lettuce ,hand full
mozzarella cheese
salt and pepper
few green chillies

Direction:
  1. cook tortilla until golden brown both side
  2. spread tortilla with cheese ,onion and chicken and lettuce. sprinkle some salt and pepper.
  3. Roll up tortilla tightly to enclose fillings.
  4. Cut wraps in half
Serving: 2

srilankan white hoppers

Sri lankan white hoppers recipe





Hoppers (appa in sinhalees) are very popular dish, usually sold in the road side shops and even five star rated hotels and restaurant in sri lanka as a breakfast. but we can have hoppers for either breakfast or dinner.

Hoppers are type of crispy pancakes made from fermented rice flour and coconut milk batter. We can make it as a plain hoppers or as a egg hoppers. Today I am going to show you how to make these two type of hoppers in very easy way.

When I was in sri lanka I used our traditional way to make it. Soak rice and grind it in to fine powder (flour) .mix rice flour and coconut water with baking soda (some people use toddy or piece of bread)until have smooth dough. keep it about 6-8 hours for fermentation. then add fresh coconut milk and make hoppers.
But now a days I am using my own way to make rice flour batter. this method is very easier than my old method. i have following this recipe for more than 2 years now. until today my hoppers are came out perfectly. You need a bowl shape pan or wok for making hoppers. Use nonstick pan if you have .here we go...this is my way to make hoppers...

Ingredients:

here's you'll need:soaked white rice,fresh coconut milk,yeast,sugar,egg optional), salt


Direction:

  • soak the white rice for 4 hours or more.
  • Drain it .grind soaked rice and coconut milk until you have a thick batter. this batter should be thin more than pan cake batter.

  • Pour the rice batter to large bowl.

  • dissolve sugar and yeast in a little amount of warm water(1/4 cup) and keep a side until firm.
  • Add yeast mixture to the rice batter and mix well.

  • Beat the egg and add in to the batter. mix well,egg is optional. But it will helps to remove hoppers from the pan. if you use nonstick pan don’t use eggs.
  • Set a side in a warm place for 1 hour.
  • When the batter is ready add salt to taste.
  • lightly grease your hopper pan with oil and place over medium-low heat.
  • Once the hopper pan is hot ,add the ladle full of batter and swirl over the walls of the pan.


  • Cover and cook 2-3 minutes til center is firm and side are golden brown.

  • For make egg hoppers,break an egg in to the middle of the hopper,after you swirl the hopper batter in the pan. cook it on low heat.

vanilla loaf cake (no oven/stove top)recipe

Vanilla loaf cake- no oven stove top recipe




sweet,buttery,this vanilla loaf cake fabulous with a cup of tea in the afternoon.
This cake takes only few minutes to mix and one hour to bake.even no oven required.can bake on the stove top.


Usually I don't use frosting for my every day cakes for health benefits. It is very taste its own.no need any frosting.but today i am going to use chocolate fudge icing for it.(i have my left over icing)





for frost this cake,first I leveled the cake and sandwich it .then spread the fudge icing on the cake .then cut in to bars. that's all

i made half of the original recipe.....

Ingredients:




here's you'll need: all purpose flour or cake flour,sugar,butter or margarine, eggs, vanilla essence, milk,fudge icing -optional


Direction:

  • Lightly butter and flour a 4 1/2-by-8 1/2-inch loaf pan.
  • mix flour and baking powder,sift 3 times.set a side.

  • In a large bowl, using an electric mixer, beat butter and sugar on medium-high until very light and fluffy.or you can mix it by hand.


  • then gradually add eggs, beating well and scraping down bowl as needed.

  • add vanilla and beat.

  • With mixer on low, gradually add flour, and milk in three addition,beating well to combine.

  • Transfer batter to pan and bake until a toothpick inserted in center of cake comes out clean.about 1 hour.

  • Fill heavy bottomed pot with 1-2 cups of salt. place the small rack in side the pot and preheat 10 minutes.place loaf pan on the rack. you can use pressure cooker without whistle instead of using pot.
  • Cover with lid or another pan( same as bake our bread method here  ) and bake around 1 hour on a medium heat. 

if using oven:
pre heat oven at 350 degrees F  bake for 45 minutes-1 hour.

Home Made Bread on a Stovetop

Home made bread recipe




Hey guys,today lam going to share my family favorite bread recipe with you. as I said 
in my older post stove top pizza recipe, I am going to bake this bread on my stove top.
(using my stove top gas cooker).even not use any machine for make the bread dough.

 Actually my mother's sister used this baking method for make her cake years a go, then following by her i use it for bake my home made bread,buns, cakes and pudding.
We can not found big difference in oven baked bread and stove top bread. only thing is stove top bread doesn't have darkgolden color crust on the top.



This bread recipe is very easy to make ..mix all ingredients in a bowl,kneed the dough on your counter top for a several minutes, keep the dough for rising,and bake.

 bread is good with butter, jam or marmaite and can toast or make sandwiches. even you can eat with any type of curries you like. my family love to eat meat,fish or with dhal curry.


Ingredients:


you'll need: all purpose flour or bread flour,sugar,yeast,salt,oil, and warm water/warm milk,milk powder (optional)


Direction:


  • In a large bowl,dissolve the sugar in warm water,and sprinkle the yeast and allow to proof.



  • Add milk powder and mix well. then add in 1 cup of flour and mix it. Let it rise on the counter top for 30 minutes.if use warm milk don't add milk powder.



  • After 30 minutes mix salt and oil to the batter.
                     
       
  • Mix in flour 1/2 cup at a time until you finish 2 ½ cup of flour.

                           
      
      

  • Kneed the dough on a counter top using remain ½ cup of flour for 10 minutes until have a smooth and elastic dough ball. method here and here  on allrecipes.com  

  • Place the dough ball in a well oiled bowl,cover with cling film or a damp cloth and allow to rise until double in size ,about 1 hour.              
            
  
  
  • Punch the dough down and shape in to the loaf.(see pictures) method here on Farmgirlfare.com
 





  • oiled the loaf pan and sprinkle some flour. place dough in to the pan and allow to rise for 30 -45 minutes, or until dough has risen 1 inch above the pan.

  • Fill heavy bottomed pot with 1-2 cups of salt. place the small rack in side the pot and place loaf pan on the rack.
  • Cover with another pan (see pictures) and bake 10 minutes on a medium high heat. 
  • After 10 minutes reduce heat to medium and bake another 25 minutes.video  here
  • Remove bread from the pan and cool on a wire rack for 45 minutes.

if using oven:

preheat oven at 350 degrees F (175 degrees C) bake for 30 minutes.

sri lankan Watalappan/ Juggery pudding

sri lankan watalappan/ juggery pudding recipe





Wishing all my Muslim friends a very happy Eid festival ” Eid Mubarak”



here comes a beautiful recipe to celebrate it.

This is a another version of steamed pudding all we loved.very famous dish in srilankan cuisines. specially among our Muslim families.



My mother-in-low used to make these wonderful juggery pudding for every special occasion in our family. She is a specialist for cooking and baking. today I’ll share her watalappan / juggery pudding with you.



You can use your oven for bake watalappan instead of steam it. Both way worked for me. This recipe will gives light texture as caramel pudding. if you like little bit of spongy  texture use 2 extra eggs.

I used my homemade cardamom powder.  its easy to prepare...First remove the seeds from the shells. . Put the seeds on a clean, dry, flat surface . Now add a teaspoon of granulated sugar. Use a rolling pin to grind the lot into a fine powder.or use your coffee  grinder with 2-3 tsp.sugar.





Ingredients:
              

you'll need: juggery,coconut milk,eggs,cardamom(not pictured) and vanilla


Direction:

  • grate the kithul juggery first.mix with coconut milk and set a side until juggery dissolve in a milk.
  • Add eggs to the blender and blend it until frothy.
     
  • Add in juggery and coconut milk mixture and blend.
          
  • Add vanilla, cardamom powder and blend well.
     
  • Pour mixture in to prepared bowl and steam for 45 minutes . 
  •                

  •   steam method here .
       Tip  : to make cardamom powder  ,First remove the seeds from the shells. . Put the seeds on a clean, dry, flat surface . Now add a teaspoon of granulated sugar. Use a rolling pin to grind the lot into a fine powder.


if using oven:
preheat your oven 180 c degrees .fill half of the large baking tray with water ,place custard pan on the baking tray and keep on middle rack in the oven and bake it for 45 minutes.
