How To Make Ginger Garlic Paste



I like to share this recipe under how-to's category..because some recipes are like a ideas or tips more than a recipe. Ginger and garlic are very important for my everyday cooking( to my srilankan kitchen). usually I make paste and freeze them in bulk . Then use within 1-2 months. you can keep small amount of paste in refrigerator for daily use. But what I am doing is ,I store my paste in 2-3 small containers in a freezer and use within 2 months.This paste not harden in freezer because of the vegetable oil.

Ingredients:

                 

   you'll need: garlic,ginger,salt, vegetable oil

  Direction:
    1. clean garlic and ginger ,then dry them completely using kitchen towel.
    2. grind ginger and garlic with salt using your blender or in a wet grinder .
    3. when grinding add oil until ginger and garlic become to smooth paste.
    4. store in a freezer using clean, dry air tight containers.

Direction:

Easy Mango Smoothie Recipe

Easy mango smoothie has only 2 ingredients. mango and milk. Just perfect for
the breakfast.adding sugar is completely optional.my mangoes are little bit sour.
Then I added some sugar.you can use honey instead of sugar or just omit it.



If you have frozen pineapple on hand can add to the smoothie. It will enhance the mango flavor.

Ingredients:
1 cup cold milk(cow's milk,almond milk )
1 cup mango (cubes)
2 tsp. Sugar or honey (optional)

Direction:
add all ingredients to the blender and blend until smooth.

devilled chicken (sri lankan style)

Devilled Chicken Recipe



hey guys,forgive me for taking too much time to post my devilled chicken recipe. i know you are
waiting.....because chicken fried rice never complete without  this deval or devilled chicken.


Ingredients:


here's all you'll need: chicken,onion,capsicum, tomato,tomato sauce, soy sauce, ginger & garlic paste, red chili flakes, salt & pepper to taste,sugar,oil for frying

Direction:

         1. first marinated chicken with salt and pepper.keep 20 minutes.

         2. deep fry chicken and set a side.

         3. in a pan heat 1 tbsp. oil medium heat.

         4. add ginger garlic paste, reduce heat very low and add red chili flakes.

         5. add tomato and soy sauce.add sugar( can  adjust)

         6. if you need a gravy,add little bit water.
           


         7. when sauce become thick add chicken.mix well.



         8. add capsicum and onion.mix well.

         9. add tomato ,salt pepper to taste.(don't cook tomato, just mix and switch off the stove)



         serve with chicken fried rice or white rice.enjoy

           Devilled chicken

           (srilankan style)




Ingredients:                                            
500 g chicken,cut in to bite size
3 onions ,sliced
4 capsicum, sliced
3 tomatoes, sliced
3 tbsp. tomato sauce
1 tbsp. soy sauce
1 tbsp.ginger garlic paste
1 tbsp. red chili flakes
1 tsp. sugar
salt & pepper to taste
oil for frying

Direction:

chicken fried rice ( Srilankan style)



                         
  I had to participate in huge food fair  held by our thindu's school parents association... there was a so many  verities of Maldivian traditional foods.dessert, rice dishes, source and pickle items, specially barbecue fish, octopus and lobsters.

 I also wanted to make some srilankan traditional dish,but didn't have  enough time to make what i wanted.I prepared srilankan style fried rice with  deviled chicken dish.

surprise .... I couldn't  keep my dish on our nursery section stall for a long time. within 20 minutes time  my dish was disappeared. can you imagine  how happy i am.....

Ingredients:


here's all you'll need: cooked and cold basmati rice , grated carrots, leeks, onion,eggs,ginger garlic paste, shreded  fried chicken,salt and pepper,butter or vegetable oil, few cashew nuts and raisins.(not pictured)
             
Direction:


  1. prepare all the ingredients and keep a side.
  2. in a  large wok, heat the oil/butter.add raw cashew nuts and raisins , drain with spotted spoon and set a side. add ginger garlic paste.add onion and fry it until golden brown.
  3. now add raw chicken,( if you use) and fry it. don't fry too much.
  4. add eggs and scramble it.




 (pls forgive me for my ugly looking pic.this huge wok I borrowed from my friend house.usually they keep it on a wood fired stove.)

   5.  add in carrot.when carrot cooked half away add cold rice and leeks.mix well.
   6.  now mix your fried chicken.(if not use raw chicken)
   7.  add salt and pepper to taste.


       8. turn the fire in to high heat and fry rice mixture another 2-3 minutes until rice start to
           spluttering.
       9. garnish with the cashew and raisins.
      10. serve with chicken deviled  and chili  paste.

1 small carrot ,grated
1 leek green part
3 eggs
few numbers cashew nuts and raisins
1 onion
1 tbsp. ginger garlic paste
1/2 cup fried chicken(shred) (can use raw chicken)                                  
salt and pepper to taste
4 tbsp. butter or vegetable oil

Direction:
prepare all the ingredients and keep a side.
  1. in a large wok, heat the oil/butter.add raw cashew nuts and raisins,drain with spotted spoon and set a side.
  2. in a same oil add ginger garlic paste.
  3. add onion and fry it until golden brown.
  4. now add raw chicken,( if you use) and fry it. don't fry too much.
  5. add eggs and scramble it.

Stove top pizza

stove top pizza recipe



 when  stay in Sri Lanka  we hadn't make bread or buns in our home. there is one bakery in our village. they are making bread in a wood fired oven. those bread are so good and still i can remind that taste.in here we can buy sliced bread ,but very expensive and  too much sugar(sweet) in it. then I wanted to make a bread in home. what about an oven?  (after moved here we are stay in a full furnished little apartment with 1 master bedroom ,bathroom, small veranda and with tiny kitchen ,including one table ,gas stove , double door refrigerator and few kitchen utensils , except  oven.)

so  after doing so many experiment i have found the exact way to make bread on the stove top.as long as i started to make home made bread and buns without using oven ( don't worry...guys these are in my to-do list ), I wanted to try to make pizza. after few Google searches I learnt how to make pan pizza on stove top.my first attempt  was 2 years a go.. till today I am making my pizza on a stove top.

if you don't own a oven like me this is the best method to try.making pizza on your stove top isn't a big deal. its really easy and taking less time more than oven and its doesn't heat up your whole  home in the summer.I used same recipe what I used for oven pizza.but direction is little bit different.

for the pizza dough normally what iam doing is,prepare my dough at night(before going to the bed)and keep in the refrigerator for make pizza on next day morning.

Ingredients:                                                      

for pizza dough

 3/4 cup warm water (105°F-115°F)
 1 tsp. instant yeast
 2 cups all purpose flour
 1 Tbsp. olive oil
 1 teaspoons salt
 1 teaspoon sugar

for the toppings

1 cup sliced sausages
1/2 cup scallion ,chopped
1/2 cup onion chopped
1 cup mozzarella   cheese, grated
1/2 cup pizza sauce
 

Direction:
        pizza dough
  1. in a large bawl mix sugar with warm water and sprinkle the yeast. let it 10 minutes to firm.(this point you can check your yeast activate or not)
  2. after  10 minutes add olive oil, salt. stir well.
  3. add flour 1/2 cup at a time and mix very well. until finish 2 cups of flour.
  4.  sprinkle little flour on your counter top and take the pizza dough on it .
  5. kneed about 2-3 minute .
  6. then place a dough in an oiled bowl , cover with plastic wrap and leave at warm place until double in volume.it will take around 30-45 minute.
  7. when double in volume divide the dough in to  2 balls..
  8. heat one large skillet on medium heat until  roll out your pizza dough.
  9. roll pizza dough out using rolling pin or with your palm to 8 inch circle.
  10. reduce the heat of your stove to low heat and place the pizza on the skillet and cover it.
  11. bake the bottom until  golden brown and flip it.


  1. now take out the skillet from the fire and spread  the toppings.
  2. again bake  until  cheese melted and bottom of the pizza is golden brown.


my kid want top up his pizza  with stripped cheese .but my favorite  is simple tomato and cheese pizza. now time for the breakfast.

 When I saw custard jelly recipe onhttp://www.inheritedrecipes.in/ rashida's  food blog I couldn't control  my craving for custard. hence my  little one also love to eat jelly I thought to make today itself. Rashida used to make this with one maari biscuit layer and two layers of jelly and custard. thank you so much Rashida ...for this little variation.it was perfect for the recipe.

actualy I didn't follow her recipe here.. Everything I made according to the direction on the jelly and custard pack. but you can follow the rashida's recipe if you want.



I used store bought custard powder and jelly crystals. its a quick method to make this dessert rather than making home made jelly and custard.

you can use any flavor you like. here i  used black current flavored jelly crystal and strawberry flavored custard powder.

curious??  about combination ? yes also I am. we will see the result.

Ingredients :

             1   packet of jelly crystals
             3   tbsp.  custard powder
             500  ml of milk ( cups)
             10-12  maari biscuit
             3  tbsp. sugar
             1 tsp. butter
             boiling water as needed


            


Direction:
          
  1. spread a layer of the biscuit in individual cups or in a large bowl. set a side.

2. from  500ml milk take 3/4 cup and mix 3 heaped tbsp.custard powder.
3. put remaining milk in to a pan, add 5 heaped tbsp. sugar  and custard mixture.
4. keep on fire and bring to boil. you have to stirring all the time to avoid scorch .
5. when custard thicken and cover the spoon, remove from the fire and stir one teaspoon butter.



6. pour in to a bowl and set in refrigerator.


7. mean while make jelly according to direction on the pack. let it to cool down. (very important)
8. after custard set in refrigerator (about 1-2 hours) carefully pour  your jelly mixture over the custard .



9. again transfer to the fridge .set it about 3 hours or over night.

it was so delicious  ....hmm combination wasn't bad..

home made quesadillas

home made quesadillas


Quesadilla is a tortilla filled with savory mixture containing cheese , meat, or vegetables then folded in half to form a half moon shape...its a mexican   originated dish. you can serve with chutney or its own.

I am pretty sure this name also little bit newer for my Srilankan  people.. but believe me guys this is very easy recipe to prepare in morning  ..for a breakfast or as a afternoon snack or for a school lunches. its taking very less time to make.

I made this simple recipe several time with easy tasty fillings. sometimes  with chicken, sausages, even tuna and potato mixture. you can use leftover vegis or meet or beans as well.  but keep it simple with the fillings. 


for Quesadillas you can use store bought wheat tortilla or home made flour tortillas. today I am going  to use my home made precooked tortilla  and mushroom sausages filling.


Ingredients:

8  flour tortillas
3  no's sausages
5  no's mushrooms
1/2  cup chickpeas
1  onion
1  tomato
salt and pepper to taste
2  cups grated mozzarella cheese


Direction:

    1.   keep your skillet on a medium heat, add oil and garlic fry   
          little  time and add onion. 

 
    2.    then add sausages and mushrooms.


    3.  when it cooked add chickpea and tomatoes. mix well.

    4.   add salt and pepper. now your filling is ready.


making quesadilla

1. heat your skillet or griddle on a medium heat , lay one tortilla in the skillet.

2. spread filing in a single layer over the half of the tortilla ,then sprinkle  cheese over the filling.       




3. fold other half of the tortilla over the filling side to form a half moon shape.

4.wait until  cheese start to melt.
then flip it.
5. cook both side until get brown spot
you can cut into wedges.

home made flour tortilla

home made flour tortilla recipe

     
 

    tortilla is a type of flat bread made from wheat flour. sri lanka , india and many Asian countries making coconut roti, chapatti, godamba roti as a flat bread. tortilla also made with water based dough. its looks like indian chapati.
 
tortilla is very famous in western countries. now a days you can find it from all the grocery stores in Asian countries. but here in Maldives you can find only paratas not a tortilla. then I thought try to make tortilla in my home kitchen. it came out more than I expected.
 
if you try these home made version I'll bet.... you never buy it from super markets. home made tortillas are cheaper than store bought.  we don't know what is in the premade tortillas. sometimes preservatives, artificial flavors or chemicals as well. personaly  I don't like use premade foods for my every day  cooking. but sometimes I had to. because here I can not find some row foods like . any way we love Maldives same as our country.
 
 these tortillas good for making quesadillas, enchiladas, tacos or you can eat with meat or vegetable curry in srilankan style .
here we go...lets start.
 
Ingredients:
 


                3  cups all-purpose flour or whole wheat flour
                1 tsp salt
                2 tbsp. olive oil or vegetable oil
                1 cup  warm water
                1 tsp. baking powder
 
Direction:
 
             1.    In a large bowl mix flour, baking powder and salt .
            
              2.    add oil and mix   well.
 


              3.   then add water  and kneed the dough 2-3 minutes.
      
              4.     cover the dough with plastic wrap or kitchen towel and keep 20 minutes.
 
               5. then divide dough in to 12-14 portion .
             
              6. take the one ball and flattened with your palm.
 
              7. on a floured surface roll the flattened dough ball in to tortilla using rolling pin.
 
              8. roll it nice and thin.
 
              9. in a large skillet or griddle , cook tortilla over medium heat until lightly browned.
   
 10. stack tortilla under clean kitchen towel to keep them warm until ready to serve. or you can put in to warm basket like me.
 
 
    * this tortilla can freeze beautifully up to 1 week in a zip lock bag.
   * instead of using rolling pin you can use tortilla press to flatten the dough..
